After whey reception, short storage, water removal via Reversed Osmosis (RO) and pasteurization, the whey is treated in the Ultra filtration (UF) process. Retentate (protein) and permeate (lactose and minerals) are stored as separate product streams. The retentate containing whey protein concentrate is spray dried. During this process the product is also treated to get instant properties. The permeate, containing lactose and minerals, is evaporated and transformed into liquid concentrate (app 66% solids). The product is pre crystallized before being spray dried. The spray drier is designed for co-spray drying to allow the enriching and adding of solids during the process. A crystallizing step before powder handling and packaging assures that the end product will be free flowing and non-hygroscopic.
